Spec:

ROLL-IN RETARDER PROOFER, an idea cabinet with racks for dough products under controlled temperatures and humidity prior to baking. 4 to 8KW electrically heated, Front and back door for roll in and roll out the rack with quick responding air wash heat/humidity system, modular foam insulated cam lock panel construction, heavy duty door with magnetic seal and full width protective bar handle, simple computerized control, accurate digital temperature , humidity and time readouts. There are several to choose from. The standard proofers are equipped to proof dough only. The Automatic Proofer feature adds the flexibility of programming times to retard and automatically proof in one operation. The Proofers and offer a unique modular design, allowing for a wide variety of sizes in both standard and pass-through models. They can be ordered as one-, two-, or three-section roll-in or roll-through models. All Proofer cabinets have easy-to-clean and heavy duty fully stainless steel interior and exterior panels, with walls ceilings and door are foam insulated, rapid responding air-wash heat and humidity system.

Technical Support

PROOFING

Controlled temperature and humidity in the proofer promotes yeast fermentation, which generates gas and causes the dough to rise. Proofing takes from 45 to 60 minutes, depending on the product. A temperature setting of 95°F (35°C) and humidity at 85% are typical but will vary slightly, depending on the product being proofed. To dry-proof, set the humidity to the lowest setting. The chart below is only a guide. For professional technical advices, please ask your dough supplier for technical reports.
